Abstract

Stone Octopus (Octopus sp.) is one of Indonesia's fisheries' export commodities, which is contributed to by the province of East Nusa Tenggara (NTT), especially Sikka Regency. Apart from that, this commodity generally promises food because this commodity must be free from all forms of potential chemical, physical, and biological hazards that have a negative impact on health. However, information regarding chemical contamination, such as the heavy metal mercury (Hg) in Octopus sp., is still very minimal and limited. This study aims to detect the presence or absence of the heavy metal Hg in Octopus sp meat. This research is survey research using a qualitative and quantitative approach. Octopus samples were obtained from three catch locations, namely Nangahale, Pangabatang, and Parumaan waters. Each sample location will be taken from class representatives found in nature, each with simple random sampling to represent the number of other octopuses. The samples were dried and then analyzed for the presence of Hg using the ICP-MS method. The research results found that the highest average Hg content came from the Parumaan catchment area, namely 0.079 mg/kg, and the lowest average Hg content came from Pangabatang, namely 0.073 mg/kg. The Hg content in Octopus sp. caught by fishermen from Nangahale village is below the BPOM threshold (0.5 mg/kg), which means this Octopus sp. is safe for consumption.
